How to Make Herb Potato Salad |

Step 1 Gather ingredients for herb potato salad recipe. For this recipe I used fresh herbs from my garden. Ingredients: 2 cups cubed red potatoes (cut bite sized) 1/4 cup chopped celery 1/4 cup chopped scallions 1 teaspoon fresh dil 1 teaspoon fresh chopped chives 1 sprig of rosemary chopped 1 tablespoon Fresh parsley leaves chopped 1 teaspoon Dijon mustard 1/2 cup Kraft mayonnaise with olive oil Kosher salt and black pepper to taste Garnish with chopped parsley
Step 2 Rinse off the potatoes and then cut them. Fill a pot with enough water to cover the potatoes. Cook the potatoes in a covered pot. Allow the water to come to a boil. Cook in boiling water for 10 minutes, or until potatoes are tender; drain the water from the pot and allow the potatoes to cool. Step 2 While the potatoes are cooling, get the ingredients ready for the potato salad. In a large bowl, combine potatoes, celery and chives. In a small bowl combine the dry ingredients with the olive oil, mustard and mayonnaise. Step 3 Add the mayonnaise to potato salad and toss gently so that the potatoes are evenly coated. Step 5
