How to Make Herb Potato Salad

Google Images Potato salad is a delicious side dish for summer meals and a perfect companion to barbecue hamburgers, chicken and hot dogs. This recipe calls for basic ingredients with the addition of fresh herbs and olive oil.  The herbs and the olive oil enhance the flavor of the potatoes and are sure to please your family’s cravings.  Make this herb potato salad ahead of time, chill for four hours in the refrigerator and serve to your family and friends.




Step 1

Gather ingredients for herb potato salad recipe.  For this recipe I used fresh herbs from my garden.


2 cups cubed red potatoes  (cut bite sized)

1/4 cup chopped celery

1/4 cup chopped scallions

1 teaspoon fresh dil

1 teaspoon fresh chopped chives

1 sprig of rosemary chopped

1 tablespoon Fresh parsley leaves chopped

1 teaspoon Dijon mustard

1/2 cup Kraft mayonnaise with olive oil

Kosher salt and black pepper to taste Garnish with chopped parsley






Step 2

Rinse off the potatoes and then cut them.  Fill a pot with enough water to cover the potatoes. Cook the potatoes in a covered pot.  Allow the water to come to a boil.  Cook in boiling water for 10 minutes, or until potatoes are tender; drain the water from the pot and allow the potatoes to cool.

Step 2

While the potatoes are cooling, get the ingredients ready for the potato salad.  In a large bowl, combine potatoes, celery and chives.  In a small bowl combine the dry ingredients with the olive oil, mustard and mayonnaise.

Step 3

Add the mayonnaise to potato salad and toss gently so that the potatoes are evenly coated.

Step 5

sgolisCover the potato salad with plastic wrap and refrigerate for two hours.  Serve the potato salad when it is chilled with your favorite summer entree.






This herb potato salad is perfect for summer parties and casual meals.
