How to Make Tomato and Bread Salad

Tomato and Bread Salad is different from any other salad you have probably ever made or ate. It is quick and easy to assemble. It will be a great conversation starter at your next get together. A great way to use some of your garden fresh tomatoes.

Ingredients needed for Tomato and Bread Salad:
8 cups of cubed bread, day old
3 tablespoons olive oil
3 cups fresh tomatoes, chopped
½ cup red onion, sliced thinly
½ cup olive oil
¼ cup capers, drained
1 cup fresh basil, minced
½ teaspoon salt
2 tablespoons red wine vinegar
½ teaspoon black pepper
1 garlic clove, minced
¼ teaspoon red pepper flakes

Directions for making Tomato and Bread Salad:
Step 1: Heat the oven to 400.
Step 2: Tear the bread into 1-inch pieces, place them on a baking sheet and drizzle with the 3 tablespoons of the oil. Sprinkle with salt and spread in a single layer; bake, turning occasionally, until the bread cubes are golden and crunchy, around 8 to 12 minutes. Set aside to cool.
Step 3: In a large bowl mix cooled bread cubes, tomatoes, basil, capers and red onion.
Step 4: In a small bowl; whisk together, ½ cup olive oil, salt, black pepper, red wine vinegar, red pepper flakes and minced garlic.
Step 5: Drizzle oil and vinegar dressing over bread mixture.
Step 6: Cover and let set for around 30 minutes.
Recipe makes 8 servings.

Good breads to use are: Italian, French or any day old dense bread.
May use cider vinegar in place of red wine vinegar.
Also good with fresh monzallera balls,1-inch diameter.
For a shortcut you could use croutons.
