The ripening of produce is a chemical reaction that can be slowed by storing fruits and vegetables appropriately. Unfortunately, not all produce reacts the same way to its environment and therefore each one must be considered individually. Here are a few good rules of thumb:
1. Store potatoes in a dark place, preferably with apples. They keep each other fresh longer.
